Easy Baked Beans
Ingredients
1 x brown onion (diced)
2 x gloves of garlic (finely diced)
Vegetables of choice (Optional) - For this recipe I used zucchini, mushrooms and capsicum
2 x cans of diced tomatoes
1 x can cannellini or butter beans
2 x tbS tomato paste
2 x tbS of seasoning of choice - For this recipe I used italian seasoning and chilli flakes
Fresh parsley for garnish - optional
METHOD
1. In a large saucepan, heat olive oil. Add onions and garlic and sauce until browned.
2. Add vegetables of choice. Cook until soft.
3. Rinse cannelloni beans to remove residue and add to saucepan.
4. Add both cans of crushed tomatoes, tomato paste.
5. Season mixture with salt, pepper, Italian seasoning and chilli flakes.
6. Cook for 10-15 mins or until beans are soft. If more moisture is needed add 1/2 cup of vegetable stock or water.
💡Recipe Hack:
Shakshuka (Baked Eggs) - Add 2x eggs to one serve of beans and bake in the oven for 15 mins. Top with feta cheese and sourdough bread.
