Mango Coconut Chia Pudding

Perfect summer breakfast idea packed full of protein, healthy fats and fibre 😋

Ingredients:

2 tbs Chia seeds
1/2 cup of milk of choice
2 teas of maple syrup
2 tbs desiccated coconut
Optional: 1 small tub Cocobella coconut yogurt - if you love coconut!

Toppings:
Shredded coconut
Fresh mango
Optional: Hemp seeds, macadamia nuts

Method:

1. In a bowl combined all ingredients and stir well.
2. Set in the fridge overnight to set/thicken. Be sure to check the mixture half way through and add more milk if the mixture seems too hard/thick.
3. Once set to your preferred consistency, place mixture into a bowl and top with fresh mango, coconut and hemp seeds.

Simple, delicious and packed full of nutrients.

I love chia seeds pudding and often meal prep 3 days worth to have for breakfast or a snack. This recipe is also great for little ones.
