Almond & Apricot Slice
Ingredients
• 1 cup of oats
• 1/2 cup almond meal
• 1/2 cup honey or sticky sweetener of choice
• 1/4 water
• 1/4 cup almond flakes
• 2-3 tbS of almond paste
• Apricots chopped (add as many as you like)
• Optional - white chocolate chips
Method:
1. Preheat oven to 180 degrees
2. Add all dry ingredients to a bowl and mix well.
3. Add all wet ingredients to bowl. The mixture needs to be somewhat moist/sticky to hold shape once cooked. Once mixture is combine, squeeze a portion in your hand. It should hold its shape. If you need more moisture - add more honey or almond paste or water.
4. Press mixture into lined tray and bake in the oven until golden brown.
GF alternative- Swap oats for almond meal. For almond meal you made need more moisture.
