Carrot Cake
Ingredients
1 cup almond flour
1/2 cup of WM all purpose flour
2 tsp baking powder
1/3 cup of sugar/sweetener
1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1/2 cup crushed walnuts
1/4 cup of raisins or sultanas
2-3 carrots grated
Icing:3/4 cup Yopro vanilla yogurt OR any yogurt of choice
1/2 cup light cream cheese
1 tsp vanilla
Method:
1. Preheat oven to 180 degrees. Line bread loaf tray baking paper and spray lightly with oil to prevent sticking.
2. Combine all dry ingredients in a bowl. In a seperate bowl combine all wet ingredients and whisk until well combined.
3. Add wet mixture to dry ingredients and stir well.
4. Pour mixture into tin and bake in the oven for 40-50mins or until fork comes out clean.
5. Whilst loaf is cooking, in a bowl combine yogurt, vanilla and cream cheese and whisk until smooth.
6. Once loaf if cooked. Remove from oven and let cool completely before adding the icing.
7. Optional: Top with crushed walnuts and cinnamon
For gluten free - Swap wholemeal four for gluten free all purpose flour.
For dairy free - Swap dairy milk to soy/coconut or nut milk products.
